Plan a Date Night at Thornton Distilling

It had been quite some time since I’d visited Thornton Distilling Co. in Thornton and when I saw they were offering a special Valentine’s meal, I immediately made a reservation. The dimly lit bar and dining area seemed like an intimate spot to enjoy some cocktails and a nice dinner to celebrate.
While the regular menu has a selection of tasty casual cuisine, they had two specials added to the menu that week - a 7-ounce pan seared filet with roasted garlic potato puree and sautéed French beans with a Dead Drop Pecan Bourbon demiglace and a Salmon Balsamic which included wild mushroom rice pilaf, over roasted Brussels sprouts, aged balsamic reduction and garlic aioli. Both were delicious and beautifully presented.
On the beverage side, we first did a flight of some of their spirits and followed with an Old Fashioned and a Frozen Grasshopper. The spirits are produced on site in this historic building that was originally a brewery and remains the oldest standing brewery in the state, dating back to 1857.
If you’re stopping by on a random day, you can select from one of their juicy burgers, barbacoa tacos, wings, chili and more. While we were there, we also started off with the sesame chili cauliflower, which is a perfect vegetarian option and has such a nice balance of the sweet and spicy sauce coating the crunchy cauliflower. We also finished off our meal with their signature dessert, the Dead Drop Pecan Bourbon Mini Bundt Cake, which is served warm and gooey. I recommend adding the “a la mode” option.
If you’ve not been there yet or if it’s been a while, take this as your sign to stop in for some spirits and bites. Better yet, plan your visit for a weekend and shedue a tour. The 150-year-old history of the property is fascinating.
